Recipe
- Plums = 5 kg
- Common Salt = 20 g
- Mixed Spices = 20 g
- Sodium Benzoate = 10 g
- Sugar = 4 kg
- Red Chillies = 20 g
- Acetic Acid, Glacial = 15 mL
Procedure
- Wash the plums thoroughly in running water.
- Discard over-ripe, soft or rotten fruits.
- Cook for about 10 minutes.
- Add sugar, salt and chillies.
- When the chutney is thick, add the rest of the ingredients.
- Mix well and fill in jars while still hot. Close with airtight lids.
