Preparation of Plum Chutney (English)

Recipe

  • Plums = 5 kg
  • Common Salt = 20 g
  • Mixed Spices = 20 g
  • Sodium Benzoate = 10 g
  • Sugar = 4 kg
  • Red Chillies = 20 g
  • Acetic Acid, Glacial = 15 mL

Procedure

  • Wash the plums thoroughly in running water.
  • Discard over-ripe, soft or rotten fruits.
  • Cook for about 10 minutes.
  • Add sugar, salt and chillies.
  • When the chutney is thick, add the rest of the ingredients.
  • Mix well and fill in jars while still hot. Close with airtight lids.
