Preparation of Apple Chutney (English)

Recipe

  • Apple Pulp = 3 kg
  • Salt = 100 g
  • Garlic = 50 g
  • Clove = 3 g
  • Raisins = 200 g
  • Mixed Spices = 10 g
  • SMC Apple Flavour 6004 = 7 mL
  • Sugar = 1.8 kg
  • Onions = 400 g
  • Cinnamon = 3.5 g
  • Acetic Acid, Glacial = 20 mL
  • Almonds = 50 g
  • Red Chillies = 6 g
  • Sodium Benzoate = 3 g

Procedure

  • Wash, peel and remove, cores from apples.
  • Cut the apples into slices with a stainless steel knife.
  • Cook the slices with all ingredients except flavour, sodium benzoate, acetic acid, raisins and almonds till soft.
  • Use a wooden spoon to mix and partially mash the contents.
  • Add the remaining ingredients and boil the mass.
  • Mix well.
  • Fill the chutney into jars and close with airtight lids.
